French press is one of the easiest ways to brew at home, but it often gets a bad reputation for being muddy or bitter. The fix is simple: use the right ratio, limit agitation, and let the grounds settle before you plunge.
What you need#
- French press
- Scale and timer
- Kettle
- Grinder (coarse range)
- Spoon and a second vessel (optional but helpful)
Baseline recipe (2 mugs)#
- Coffee: 30 g
- Water: 500 g (ratio 1:16.7)
- Water temp: 94–96 C
- Grind: coarse (like breadcrumbs)
- Total time: 8–10 minutes (includes settling)
Prefer it stronger? Use 32–34 g for 500 g water. Prefer it lighter? Use 28 g.
Step-by-step (clean-cup approach)#
- Preheat the press with hot water, then discard.
- Add 30 g coffee.
- Start timer and pour 500 g water evenly.
- Do not stir hard. Use a spoon to gently ensure all grounds are wet, then stop.
- Put the lid on (no plunging yet) and steep until 4:00.
- At 4:00, remove the lid. You will see a crust. Use a spoon to break the crust with 3–4 gentle pushes.
- Skim off any foam and floating bits (optional but improves clarity).
- Put the lid back on and wait 5–6 minutes so grounds settle.
- Plunge slowly until the screen meets the surface, then stop. Do not force it.
- Decant immediately into a server or mugs. Leaving coffee on grounds will keep extracting.
Why this tastes cleaner#
- Less agitation = fewer fines suspended
- Settling time = more particles drop out
- Decanting = prevents over-extraction in the press
Dial in by taste#
Sour, thin, or “watery”#
- Grind a touch finer
- Increase steep time by 30–60 seconds (keep settling time)
- Increase dose slightly
Bitter, harsh, or very dry#
- Grind a touch coarser
- Lower temperature (toward 94 C)
- Avoid stirring; reduce crust-breaking pressure
Too much sludge#
- Grind coarser
- Add longer settling (up to 8 minutes)
- Plunge slower, or stop plunging earlier and decant
Common mistakes#
- Plunging fast and forcing the screen down
- Not decanting (coffee keeps extracting on grounds)
- Grinding too fine “because it tastes weak” (use dose first)
Quick checklist#
- Ratio around 1:15–1:17
- Gentle wetting, no aggressive stirring
- 4 minutes steep + 5–6 minutes settle
- Slow plunge + decant
Summary#
Use a moderate ratio, keep agitation low, and let the coffee settle before plunging. French press can be sweet and clean without fancy gear once the workflow is consistent.
